About Paul B. Addis: Dr. Addis is Professor
Emeritus, Food Science and Nutrition, University of Minnesota. Dr.
Addis has published more than 100 original research articles on
many subjects including antioxidants, lipid oxidation and free
radicals in human health and frequently is asked to lecture on
topics like food additives, toxicology, nutrition, heart disease
and cancer. He is a Fulbright Scholar and holds patents on the
expansion of the chemical structure of insoluble fiber to improve
functionality. Dr, Addis is one of the founders of Fiberstar, a
corporation involved in the development of ingredients for foods
and cosmetics. He currently also serves as a Director of Nutrition
Research, Botanic Oil Innovation, Inc., Spooner, Wisconsin. In
addition, he is a consultant to the Department of Bioproducts and
Biosystems Engineering at the University of Minnesota. Paul has
also consulted for Pillsbury, General Mills, Hormel, Kemp's
Fisheries, Pacific Grain Products and many others.
During his 37 years at the University of
Minnesota, Dr. Addis had the opportunity to work with some of the
leading medical centers including Mayo Clinic, University of
California at Davis, University of California at San Diego and the
University of Washington in Seattle.
